How many times have
you visited an espresso bar
and been disappointed
with the beverage on offer?
They always seem to have the
latest fully automatic espresso gizmo and still don't serve espresso
the way it should be.
Thin watery brown liquid is not espresso. Bitterness is not espresso.
What does it take to
make good espresso?
Fresh
coffee beans, freshly ground.
Coffee that was ground days
ago does not produce quality espresso.
Neither does a sorry
brew made from over-roasted cheap beans.
True espresso is made from
a variety of different beans, precisely roasted.
The resulting blend provides
a whole range of flavours.
I strive to serve authentic
espresso and espresso based drinks using
Gaggia Lever machines
(GX) that date from the late '70s.
The lever espresso machine
was invented by Achille Gaggia in 1948 as the solution to the problem
of extracting all the flavour
and oils from coffee beans. The idea was a spring loaded piston
that could exert the 9 bar
of pressure on water at the correct temperature required for coffee extraction.
His system revolutionized
espresso, which until then had been made using pure steam
- a method which burnt
the coffee.
Nowadays the spring lever
machine has been largely replaced by a pump that does the work
instead, but lever machines
can still be seen in thousands of cafes around the world,
as they are so reliable and
simple in operation. Using them requires more skill
than using the automatic machines,
but allows the operator a great deal
more control over the quality
and flavour of the coffee served.
I use lever machines
because there is an art in using the correct technique for this method.
I don't want to just press
a button to produce your espresso - I want control over the process to
ensure the espresso I make
for you is the best I can achieve from freshly ground coffee
- whether it be drunk straight
or used as a base for Cappuccino or Latte drinks.
I can also custom roast
gourmet coffees for a completely individual service.
I have an espresso
trailer available for your event.
I cater for events of all sizes and am happy to come to an arrangement
for your private party or corporate function. My trailer is a compact
8' x 6' and is fully independent of services - I can literally park and
serve good quality beverages within a short space of time. Depending
on the nature of your event I can serve beverages in either quality disposable
ware or porcelain cups and saucers. I can also provide cold drinks
and basic snacks, such as pastries etc that complement my coffee and, if
you want the full experience, ask me to bring the accordion!
