Take one normal Portafilter and one drill and do this to it...
Jeff, my ever handy neighbour had intended running a hole borer through, but it got stuck in the rather
thick brass, so he resorted to chain drilling several holes and then filing it smooth. A rather nice job he did, too.
Time to set up some lights and have a play with my new toy,
a tiny Sony DSC-T1 5 megapixel camera...
I was expecting the worst, since I'm sure my tamping has become fairly casual,
what with doing it a few hundred times each day...
But the pour looks even, lasting over 25 seconds before any real signs of overextraction
anywhere, except for one pour, where this rather strangeness occured...
(Also taken on a different white balance setting).
I wonder whether the Staub or NSEW tamp had any effect (the tamper I used was a bit smaller than the pf)
Immediate things I noticed were along the
lines that others have noted - persistant crema and "better" mouthfeel.
I actually found the shot creamier and with less bitterness, so much so that I drank the first shot with no sugar,
and the second, in a cappuccino, tasted smoother too. (I always take sugar - can't say I liked it without, but it
was far more palatable than other shots I've tried.)
